@st margarets – shop 9
417 – 421 bourke st
surry hills, sydney

loved

the soft, not too thin, not too thick pizza base
the salamino (which legend has it was the pizza of choice for a certain lead singer of a little band called U2 when they were touring in Australia)
seeing the pizza oven, logs and the kitchen as you walk in
the ‘less is more’ approach to pizza toppings – magic to a minimalist’s ears
the discipline of pizza – read more here
no variations
the service – modern & casual with a good sense of humour – very responsive to feedback

didn’t love

the uncharacteristically heavy handed use of salami on the salamino

ate

patate pizza – minimalist perfection – super finely sliced desiree spuds arranged over the surface like fish scales and scattered with rosemary leaves and sea salt crystals
the salamino – another pizza without tomato sauce. mozerella cheese and ricotta with a lovely mild salami
insalata di ruchetta – classic rocket & shaved parmesan minimally dressed with good oil and a touch of lemon
hazelnut gelato – a solid performer

on previous visits have also been a fan of the following:
margherita ‘extra’ – buffalo mozerella, parmesan, fresh tomato & basil
speck & fontina
crime di rapa – wilted greens with spicy pork sausage (and I think mozerella)

drank

Peroni Leggera
2008 Toscolo Chianti
machiatto

value

reasonable – $50 for 2 + drinks (no BYO)

reservations

none taken
usually not too much of a wait for a table – although it’s been a while since I was there on a friday night. the beresford is quite handy for a drink while you wait.

perfect for

when you need a hit of classic authentic pizza perfection
